Last night, we dreamed a little sushi floated through a pink-colored sky. A cowgirl with a mischievous grin tossed us a roll, and it landed perfectly on our plate before we even had a chance to question it. It tasted smoky, crunchy, entirely plant-based, and somehow… magical.
That's the vibe we're chasing this January.
Dreaming greener isn’t about rules or giving things up. It’s about noticing what plants can do, letting flavors surprise you, and being open to something unexpected. The new year feels a lot like that too; wide open, flexible, and full of possibility.
This isn’t about perfection or following rules when trying vegan. It’s about rolling with what tastes good, feels good, and sparks a little wonder along the way.
Here’s how we do it:

1. Start with a favorite, twist it a little
You don’t need to give up your favorites to dream greener. Sometimes all it takes is a tiny swap to make something feel brand-new: tofu instead of eel, vegan cream cheese instead of dairy, plant-based tuna instead of fish — suddenly, old favorites take on a little extra magic.
South Pacific: Sweet BBQ eggplant eel tempura + vegan cream cheese + pineapple + scallions = a dreamy remix of a classic.
Hot Popper: Gooey, crunchy, spicy — all the original chaos, now fully plant-powered.
Tuna Tower: Plant-based tuna, avocado, rice, and a sweet soy drizzle — serious “pause and savor” energy.
Lettuce Wraps: Tofu swaps in for chicken, leaving the peanut sauce, sesame noodles, and crispy rice noodles to do their thing in full bliss mode.
Dreaming greener doesn’t mean starting over — it means noticing how a tiny tweak can make a bite feel like a little revelation.
2. Follow the weekly plant-based journey
This January, we’re rolling out a new vegan special each week:
Week 1 · Jan 5–11 — $5 Cowgirl:
Week 2 · Jan 12–18 — $5 Thai Hippie
Week 3 · Jan 19–25 — $5 Crunchy Cabbage
Week 4 · Jan 26–Feb 1 — 30% off all vegan maki
Whether you pick one week, chase the full lineup, or follow your cravings wherever they float, the journey is yours.
3. Let the plants surprise you
Sometimes the most memorable flavors are the ones you didn’t even know you were looking for. Plants aren’t just stand-ins — they can be the stars of the show:
For example:
Kaluna & Avo Kaluna: The kind of roll that makes you pause mid-bite, just to savor it.
BĂto Maki: You didn’t see it coming, but it makes perfect sense.
Green Goddess: Sharp and indulgent at the same time, like a little flavor wink from the universe.
Every bite is a reminder that vegan sushi doesn’t mean “less than.” It means imaginative, indulgent, and yes… a little dreamy..
4. Play with the unexpected
Dreaming greener means leaning into surprise. Let textures collide, sauces shine, and flavors mingle in ways you wouldn’t expect — and somehow, it all works. That’s the beauty of letting your tastebuds wander.
A tofu tempura that crunches like it’s floating.
A drizzle of sauce that tastes like sunlight you can chew.
Your favorite roll, just vegan, nudging your brain and your palate to “what if?”
Plant-based doesn’t have to be serious. It can be playful, indulgent, and yes… maybe even a little trippy. Let yourself notice the little moments that feel impossible, but taste exactly right.
5. Make it your own
Veganuary isn’t a rulebook — it’s an invitation. Pick a roll, swap in a plant-based twist, chase a craving, follow your curiosity. There’s no wrong way to dream greener✨
